Zucchinis and Raw Mango Spicy Salad

Zucchinis or cucumber is a cool vegetable which reduce thirsty as there are a lot of water in it. Zucchinis also reduce body heating, support urine system, and reduce a pain from sore throat. Fiber is one component of zucchinis which will support excretory system and reduce cholesterol. Zucchinis provides a lot of water, and low energy (zucchinis 100 grams contain 12 kilocalories). So food with zucchinis and cucumber is good for diet program.

 

Salad Ingredients


2        Zucchinis               
3        Shrimp                   
½ cup          Chopped carrot           
¼ cup         Chopper Raw and sour mango   
1         Sliced shallot                
½ cup         Basil leaves                
½ cup         Mint leaves               

Spicy sauce ingredients


2 ½ tablespoons     Lime juice   
3 tablespoons         Fish sauce   
1 tablespoon         Sugar       
Fresh chili (as required)

Instruction


1. Wash zucchinis and peel. Slice into small pieces then dip into cool iced water to make zucchinis fresh and crispy. Drain out by put zucchinis in sieve.
2. Clean and peel shrimps. Poach in hot water for a while and do not let to be over cook. Dip into cool iced water then drain out.
3. Put zucchinis, carrot, mango, boiled shrimp, shallot, basil leaves, and mint leaves on a plate. Wrap a plate with cooking plastic sheets and put in fridge to keep freshness and cool.
4. Mix well lime juice, fish sauce, sugar, and fresh chili in a bowl.
5. Serve the plate of vegetables and spicy sauce separately. Mix salad and spicy sauce all together when eating.
